A review of fresh-squeezed orange juice odour lists 36 consensus aroma-active compounds from gas chromatography–olfactometry studies, mostly at trace levels, notes that (+)-limonene is essential though its exact role is uncertain, and reports that the most successful odour models contain 23 odorants.

Fresh-squeezed juice; mechanical squeezing raises peel-oil volatiles and changes the balance of key odorants.
