Potent odorants of peppermint oil ↗

Gas chromatography–olfactometry with aroma extract dilution of peppermint essential oils, including oil from Piedmont in Italy, found the highest flavour dilution factors for 1,8-cineole (eucalyptus, fresh, camphoraceous), menthone (minty, herbaceous) and menthofuran (minty, musty, petroleum-like), among potent odorants the authors identified tentatively.

Essential oils, not fresh leaves; the study set out to tell Piedmont oil from others, and its potent odorants are tentatively identified.
