MOLECULE

3-phenylpropanoic acid

A molecule is one chemical compound. SmellBook lists 3-phenylpropanoic acid because a VERIFIED claim names it in the evidence for 1 Atlas entry: Honey.

What it is

These identifiers pin down exactly which compound is meant, so the same molecule can be found in other databases. They say nothing about how it smells.

Where research reports it

Each report below is a VERIFIED claim, quoted with its scope and the source it rests on. The role says what the claim states about the molecule, in the claim’s own words.

Honey

Key odorant · the claim says “ranked five odorants highest”

The claim names it among the molecules that matter most for the smell of what was studied.

Aroma extract dilution analysis of unifloral rape honey ranked five odorants highest: (E)-β-damascenone (cooked apple-like), phenylacetic acid (honey-like), 4-methoxybenzaldehyde (aniseed-like), 3-phenylpropanoic acid (flowery, waxy) and 2-methoxy-4-vinylphenol (clove-like); a model mixture of the 12 odorants with odour activity values of at least 1 reproduced the honey's aroma.

Scope: Rape honey harvested in 2009, with the quantitative results confirmed on a honey from 2011; honeys from other flowers have different odorants.

What this page does not claim

WHAT THIS MEANS

SmellBook lists a molecule only where a VERIFIED claim names it, in the role and scope that claim states. A molecule reported in a smell's evidence is not the whole smell: most smells come from many compounds together, and the studies measured particular samples, such as one cultivar, an essential oil or a cooked product.
