A review of edible seaweeds reports volatiles composed mainly of aldehydes, ketones, alcohols, hydrocarbons, esters, acids, sulfur compounds and furans, with benzaldehyde, 2-octenal, octanal, β-ionone and 8-heptadecene identified in several species.
